One of the best ways to get more variety in your diet is to explore what fruits and vegetables are in season. With summer coming to a close, there are a lot of delicious fall vegetables popping up at farmers’ markets, like butternut and acorn squash, Brussels sprouts, kale, pears, sweet potatoes and pomegranates!
Here are a few of our favorite ways to enjoy fall produce.
Squash in Mexican Dishes
One great way to sneak in some fall vegetables, especially for kids, is in Mexican foods. Try sneaking some into these butternut squash enchiladas or give these chicken sausage and roasted vegetable quesadillas a shot.
Pumpkin for Breakfast
We love stirring canned (or fresh, if you’re ambitious!) pumpkin into our oatmeal in the mornings. And if you’re in the mood for a pumpkin spice latte but would rather skip the guilt, try a banana pumpkin smoothie!
Kale in Soups and Stews
While your first instinct might not be to toss a bunch of leaves into a soup or a stew, kale actually holds up really well. Trust us! Give it a shot with this hearty White Bean, Sausage and Kale Soup.
Pumpkin and apples tend to be the stars of the show in the fall, but don’t forget about pears! Pears are delicious by themselves, but we also like them grilled with ice cream or, when we feel the need to be a little healthier, cider-poached with yogurt and toasted almonds. Yum!
